AUTHENTIC BUTTER  CHICKEN












Exclusive My Own Secret Recipe...

Ingredients

1) Chicken 1 kg
2) Onions 500 Gms
3) Tomatoes 500 Gms
4) Red Chilly Powder 2 tsp
5) Turmeric Powder 1 tsp
6) coriander Powder 1 tsp
7) kasuri methi Leaves 3 tbspn
8) Orange Red Food Colour
9) Salt to taste
10) Oil 1cup
11) Coal 2 pieces
12) Ginger Garlic Paste 1 tbsp
13) Ground Peanuts 1/2 Cup

Method

Step 1

boil whole onions And Tomatoes and grind Them together ...and make a paste of boil onion and tomatoes ...

Step 2

Take one cup oil and fry chicken in it with ginger Garlic paste..

Step 3

Add red chilly powder , coriander Powder, Garam masala powder and salt in it and sauté ...

Step 4

Now Add Boil onions and tomatoes paste... And cook it till chicken is tender...

Step 5

Now Add 1/2 Cup Ground Peanuts

Step 6

Now add orange yellow food colour and Kasuri methi leaves...

Step 7

Heat two pieces of coal on direct flame till very hot. Place the hot coal pieces in a steel katori(bowl) and place the katori(bowl) in the centre of the pan with chicken. Put cloves and ghee in the katori(bowl) and cover the pan for two minutes.


Remove the cover and the katori(bowl) and mix well. Add cream and mix well. Add coriander leaves and mix well.



Step 8

AUTHENTIC QORMA

AUTHENTIC QORMA

Ingredients

1 kg mutton cubed
l cup chopped onion
1/2 cup oil or ghee
1 tablespoon ginger garlic paste
1/4 piece of nutmeg
1 Inch cinnamon stick
6 cloves
1 small pieces of mace
12 green cardamoms
2 teaspoon red chili powder
2 teaspoon coriander powder
1-1/2 cups plain yogurt
1 tablespoon Kewra Water
1 teaspoon saffron soaked in a l/4 cup of milk
salt to taste


Method

Step 1

Heat the oil and fry the onions till they are light golden in colour.

Step 2

Now grind Fried Onions along with the cardamoms, cloves, nutmeg and mace.

Step 3

Re-heat the oil. Put the cinnamon, ginger garlic paste, mutton pieces and salt. Cook for 15 minutes or until the meat is light brown.

Step 4

Mix the ground onion mixture with the yoghurt, red chilly powder and coriander powder.

Step 5

Add this to the meat and let it cook over a low heat till the meat is tender.

Step 6

If required, add 1 cup of water to make gravy.

Step 7

Add 1 Tablespoon kewra Water and saffron on it and let it simmer for approximately 5 - 10 minutes till the oil floats on top.

ACHARI CHICKEN













Ingredients

1) Chicken 1 kg (6 pieces)

2) Onion seeds 1 tsp heaped

3) Fenugreek seeds ¼ tsp
4) White cumin seeds 1 tbsp
5) Salt to taste
6) Red Chilly Powder 1 tsp
7) Coriander powder 1 ½ tsp
8) Turmeric ¼ tsp
9) Ginger garlic paste 1 tbsp
10) White cumin 1 tsp (roasted and crushed)
11) Yogurt 1 Cup
12) Oil ½ cup

Method

Grind coarsely onion seed, fenugreek seeds, white cumin seeds, mixed with ½ tsp salt
Marinate chicken with yogurt, coriander powder, turmeric, ginger garlic paste, salt and white cumin for 30 minutes.

Heat oil, add chicken with All Ingredients, cover and cook till chicken tender.
cook on low flame for 10 minutes.

Garnish

Garnish With 2 Tbsp Parsley And 3-4 Whole Green Chillies ... And



Serve with nan.

SOOJI KA HALWA

Ingredients

Semolina 250 gm
Ghee 250 gm
Sugar 250 gm
Water  500 gm
Green cardamom  6
Almonds and pistachio sliced 2 tbsp each
Zaffran ½ tsp soaked in 2 tbsp milk
Arq-e-gulab  2 tbsp

Method

Heat ghee, add green cardamom, fry suji well till light golden about 10 minutes, remove from fire, add in sugar, hot water, stir and keep on fire again, cook stirring continuously till water dries, cover and keep on dum on tawa, lastly add arq-e-gulab, serve garnish with almonds and pistachio.

YAKHNI PULAO

INGREDIENTS
============
• Mutton 1 kg
• Green chilies 5 ... See More
• Garlic cloves 13
• Basmati rice ½ kg
• Onion 1 large sliced
• White cumin 1 tsp
• Black cumin ½ tsp
• Small green cardamoms 5
• Big cardamoms 3
• Cinnamon 3 pieces
• Star anise 1
• Whole black peppers 11
• Cloves 5
• Yogurt whisked 1 cup
• Oil or ghee 3/4 cup
• Salt to taste





METHOD
======

 Soak rice for at least ½ hour .Boil mutton with salt ,
 green chillies and garlic cloves , with 16 cups of water ,
 till done ,and 4 cups stock remains, so much that mutton is tender
 but does not comes of the bones. Strain stock and keep mutton separate.
 In a pan heat oil add sliced onions, when they become light brown
 add black and white cumin and all whole spices mentioned above,
 cook a little add mutton pieces and stir fry them so that it become brown,
 add yogurt, cook now add 4 cups stock and 4 cups water ,
 when it comes to a rolling boil add rice,
 cook on a high heat for 5 minutes , then cook on a slow heat ,
 when done remove heat and put on dum...
